Jalepeno Poppers
Jalepeno Poppers
Cut slits in peppers. Remove seeds. Place a small wedge or slice of monterey jack cheese in center, secure with toothpick.
Dip peppers in flour and beaten egg mixture plus a pinch of salt, than cornmeal. Fry in 1 inch of hot oil.
Drain on paper towels. Remove toothpicks. Serve immediately.

Enjoy this classic Albondigas Soup (Caldo de Albóndigas) family recipe. This traditional Mexican meatball soup is made with a light beef broth, vegetables and wonderful miniature meatballs that combine ground beef, pimientos, cilantro, cumin and garlic.

Recado Colorado - Quick Achiote Paste

Achiote Paste comes from the seeds of the annatto tree, native to the Americas. Achiote paste has an earthy flavor, on the bright side, but is not a hot or spicy chile. Recado Colorado is a quick version of achiote paste.
