Blueberry Quinoa Parfait

The soft and tender quinoa worked surprisingly well in the breakfast parfait with the creamy yogurt and the juicy blueberries! One of the good things about making this for breakfast is that you can cook a big batch of the quinoa on the first day and then just pull it out of the fridge and whip up the parfait in a few minutes for the next few days. I am definitely looking forward to making more of these this summer!

East Carolina BBQ Sauce

For pulled pork I like a vinegar based sauce as opposed to traditional, thick barbecue sauce.  This Carolina sauce is on the thin side and has a real TANG to it.  If you feel the vinegar would be too strong for you, you can always cut it down by half, taste it and add accordingly.

I absolutely love this sauce squeezed on pulled pork and put between two pieces of white bread.  Yum.

Rummy Bears

Aw, how cute, boozy bears! Yes and no. As adorably innocuous as these guys look, be forewarned: they are strong. You will start feeling all giddy after a few, and eventually, they make you go a little crazy. I took these to my friend's birthday party and we all slurped them back like birthday shots. They're not quite a shot's worth each, but almost feel stronger with the sugar factor compounded by the alcohol.

Philly-Style Steak Sandwiches

Some people might think it a bit of a waste to use a pricey cut of steak like New York strip for steak sandwiches, but the flavor and tenderness can't be beat. Combined with the roasted peppers, sautéed onions, mushrooms and provolone, just one pound of steak makes four hearty, delicious sandwiches. We dubbed the recipe "Philly-Style" because it is a bit of a departure from the classic Philly Cheesesteak, but we think the city deserves credit for just about any concoction that includes steak, cheese and hoagie roll.

Broccoli Parmesan Fritters

There’s a lot of broccoli and very little pancake in this fritter. The broccoli is not grated or pureed, but left in small, recognizable bits that are bound lightly, faintly, to their batter of egg, parmesan and flour. And when you cook them right — that is, to a crisp, in a preheated, heavy, oil-slicked skillet — they get a fantastic crisp edge to them, like they were coated in frico. I imagine that if you were to roll the pancake in additional parmesan, it would get extra frico, though I haven’t tried it yet. Also, I’d like someone to start a band called Extra Frico.

Spinach Strata

Aside from being comforting and filling, stratas are really easy to make. Whisked eggs and milk are poured over bread and your favorite fillings, then everything’s left to soak overnight. In the morning, just pop it in the oven while the coffee’s brewing. Breakfast is served.

Stuffed Zucchini Boats

This easy zucchini recipe is sure to please even the pickiest of vegetable eaters. A simple filling of sautéed sweet onion, zucchini, breadcrumbs and melted mozzarella cheese turn a simple vegetable into a delicious, satisfying side dish that can easily be made ahead for company.
